Convenience Food - Freezer Edition

I have totally been enjoying the convenience food I whipped up on my most recent freezer cooking day. I love that I can just reach into my freezer and pull out a nutritious lunchtime meal. Two minutes in the microwave, and I’m a happy camper!

Here is another convenience food option for you:

Last night, I made a big batch of Hearty Friendship Stew. I love this stew because not only is it tasty, but it is really easy to make, and I can have a bunch of soup mixes ready to go for a lazy night of cooking.

My boys love it when I make this stew, but there are always leftovers. A couple of years ago, I purchased some plastic food containers that are about the size of one of our bowls. They are a little narrower at the bottom, though, which is a good thing. I ladle two scoops of soup into each container and freeze it.

These plastic containers take up a lot of room in the freezer.

However, for convenience sake, I thaw the bottom of the bowl under running water and then pop the soup out of the containers. They fit nicely in Ziploc freezer bags.

When it is time to eat, we just put one of these blocks of soup into one of our regular bowls and microwave! Another quick and easy meal!

    Wow, that’s a neat trick! I let my stew (or soup or whatever) cool off then I ladle it into ziplock bags and then flatten it as much as possible, put it on a cookie sheet and into the freezer. Once solid it can be removed from the cookie sheet that’s just so the bottom will be flat. It is amazing how much I can get in my freezer by doing it that way. It might not work as well for a full family size meal but I put one bowlful or a little more in each ziploc bag, so it is individual sized.

    Kelleigh, if you’re interested I have a freezer meals cookbook that we love. We routinely make breakfast burritos. You individually wrap them and freeze them. 1:45 sec in the microwave and they’re done! Perfect for breakfast on the go… or, in my case, a growing 16 year old boy!
