Hearty Friendship Stew

I’m plopping another recipe on my blog, since a friend asked for it and it took me FOREVER to find on my computer!!  However, this is a great one, so I hope you try it!   (I think I’ll make this for dinner tonight!)

Hearty Friendship Stew
This makes a great gift or meal for a family with a new baby.  I brought it home from a MOPS meeting and made it for dinner (with some minor modifications to make it “Hearty” and “Stew” instead of soup!).  Mitch LOVED it!  It is super cheap to put together and keep it in the pantry for nights that you don’t want to think about dinner.  Pretty, too!

In a jar or ziploc baggie, layer the following:
1/4 C. dried split peas
1/4 C. dried lentils
1/4 C. long grain white rice
2 Tbs. pearl barley
2 Tbs. dried onion flakes
2 Tbs. + 2 tsp. beef bullion
1 tsp. Italian seasoning
1 bay leaf
In a separate baggie, 1/4 C. pasta (I used salad macaroni) – stuff into top of jar.

Place the soup mix, 1 14.5 oz can of diced tomatoes and 1 8 oz. can of tomato sauce in a decorated paper bag and tie this recipe to the bag:

Hearty Friendship Stew

You will need:
1 bag of stew mix (includes grain/spice mix, pasta, tomatoes and tomato sauce)
1 lb. Ground beef
black pepper to taste
garlic powder or minced fresh garlic to taste
6 cups water

In a large pot over medium heat, brown beef with pepper and garlic.  Drain excess fat.  Add canned tomatoes, tomato sauce, water and grain/spice mix (not pasta).  Bring to a boil, then reduce heat to low.  Cover and simmer for 45 minutes.  Stir in pasta, cover and simmer 15 to 20 minutes or until grains are tender.  Serves 8.

EDIT:  Yep!  The boys loved it!  I loved that my ground beef was already browned and that it was a totally mindless, hearty, healthy dinner!  My husband said it was the best meal all day . . . and his lunch was catered!
