Smoky Guacamole

The back story: Some avocado coupons recently became available on www.smartsource.com.  There were $1/2 (one dollar off two) and $1.50/4 coupons.  I printed.  Of course.

THEN, The Krazy Coupon Lady Joanie posted a guacamole recipe (as the ladies often do) showing us what we could create with our coupon scores.  I love that.  I noticed that one of her ingredients was mayonnaise.  I had never heard of using mayo, so I was intrigued.

The next day, Mitch came home from work raving about some guacamole that he had at lunch that day.  He even brought home a sample for me to try.  I tasted a bit of smoke.  Perhaps smoky chipotle?  I have no idea.  I just noted the smoke.

SO, I bought my avocados and decided to experiment with some of the ingredients I had on hand, adding in the mayonnaise and a little liquid smoke (which my grandma bequeathed me when they moved into a senior residence).  (Funny side story: All my young life, I thought my grandma burned her green beans.  It wasn’t until I was married and visiting my parents while my grandparents were also visiting that I noticed a small bottle of liquid smoke on the stove.  It all clicked for me.  I was a giggling fool when I figured it out!!)

Ahem.

So, without further ado, here it is.

Kelleigh’s soon-to-be famous

Smoky Guacamole

2 Avocados
3 Tbs fresh cilantro, snipped
1/2 Cup medium salsa
1/4 Cup mayonnaise
juice of 1/2 a lime
1/4 to 1/2 tsp. Hickory Smoke flavoring (liquid smoke)

Combine all ingredients and blend well.  Serve with chips!


It is to die for.  Seriously.

Our family can’t get enough!!

Think I’ll see if I can print that coupon again . . .

    Here’s a tip for you – you can keep unripened avocados in the fridge for a few days and they won’t ripen until you take them out and set them on the counter. My daughter eats TWO A DAY (not even kidding) and I can buy a week’s worth at one time and keep them in the fridge.

    It does NOT work with avocados from Chile, which are usually only around in the absolute dead of winter…the rest of the time they’re either from Mexico or California.

    Thanks Joana! I actually wondered if that was the case, so I tested that theory out this week. Sure enough! Works great! That’s a good thing, since I bought 4 this week and probably won’t be making another batch of guacamole until next week. There is only so much a person can take, right? Well, maybe not for your daughter! LOL! It’s awesome that she likes such a healthy food!! Talk about good brain development!!!

    Had to share that I giggled at your discovery of Liquid Smoke at your grandma’s. IF I were a person who liked avocados, this might be something I would try. Unfortunately, I’ve never developed a taste for them. Your friend, Joana’s daughter can eat all mine! LOL

    Yay! Thanks for sharing! You bet I want to try it. Do you think it would taste good w/o the liquid smoke, or is that what really gives it the pizazz it needs to be deemed your soon-to-be-famous guac?

    I’m sure it would taste wonderful without the liquid smoke, but it does give it the extra pizazz. I wonder if you could get the smoke flavor some other way. Perhaps roasting some red peppers and adding those? Oooh! Sounds like an idea . . .
